Recipe of the week: Grilled Cheese Sandwiches

    Grilled cheese is an all-American classic that many of us not only enjoyed as kids, but still make to satisfy that childhood craving. The perfect grilled cheese should have golden brown, crispy bread with just enough butter, but not so greasy that you need a stack of napkins to clean up the mess. And, most importantly, the center should be nice and melted.  Here are two great recipes that offer a little twist on the classic grilled cheese sandwich, which vegetarians and meat eaters are sure to enjoy.

Vegetarian Grilled Cheese Sandwich:
Ingredients:
•    2 slices of your favorite bread
•    2 to 3 slices of American or Swiss cheese
•    ½ roma tomato, sliced
•    ¼ avocado, sliced
•    ¼ onion, sliced
•    Butter or margarine

Directions:
1.    Coat a skillet with butter or margarine, and cook over medium heat.
2.    Place one slice of bread in the skillet and layer the cheese, tomato, onion and avocado. Cover with the remaining slice of bread.
3.    Grill until the bottom layer of bread is light brown, then flip the sandwich over.
4.    Continue to grill until the cheese is melted.
5.    Serve and enjoy.
Prep Time: 10 minutes
Cook Time: 7 minutes

Barbecue Bacon Grilled Cheese Sandwich
Ingredients:
•    2 slices of your favorite bread
•    2/3 tablespoon barbecue sauce
•    2 slices of sharp or smoked cheddar cheese
•    4 to 6 slices of cooked bacon
•    1 slice of shredded Monterey Jack cheese
•    Butter or margarine

Directions:
1.    Pre-heat a skillet on medium heat.
2.    Spread the barbecue sauce over the bread slices.
3.    Over one slice of bread, arrange the cheddar cheese and bacon. Then, sprinkle the Monterey Jack over the bacon.
4.    Cover with remaining bread slice.
5.    Melt about 2 teaspoon of butter in the skillet and place the sandwich on top of the melted butter.
6.    Cook for 5 to 6 minutes on both sides or until the cheddar is melted.
7.    Serve and enjoy.
