Recipe of the week: Baked Mac and Cheese

There is nothing better than reliving your childhood with a nice bowl of mac and cheese. Mac and cheese is always the perfect choice and baking it makes it taste even better. This recipe is pretty simple to make. On its own, it can be a great lunch, or pair it with a few side dishes  or an excellent dinner.

BAKED MAC AND CHEESE

Start to finish: 40 minutes

Serving: 6

1 (8-ounce) package elbow macaroni

2 tablespoons butter

¼ cup chopped onion

2 tablespoons all-purpose flour

2 cups milk

¾ teaspoon salt

¼ teaspoon pepper

2 cups shredded cheddar cheese

Preheat oven to 350 degrees F.

Melt the butter in a medium saucepan over medium heat. Sauté the chopped onion for two minutes. Gradually stir in the flour and cook for one minute, stirring constantly. Stir in the milk, salt and pepper. Cook, stirring frequently, until the mixture boils and thickens.

Meanwhile, bring a separate pot of lightly salted water to a boil. Add macaroni and cook for 10 minutes, then drain the macaroni and set it aside.

Add the cheddar cheese to the milk mixture; stir until cheese melts. In a baking dish, combine macaroni and the mixture, making sure to mix well.

Bake for 30 minutes. Finally, serve and enjoy.
