January 23 is National Pie day, a day steeped in tradition since the early ‘80s to celebrate the coming together of family and friends and most importantly, to make some great-tasting pie. This year, why not give these quick and easy recipes a try?

Mug Pies

Ingredients:

  • 2 small bowls
  • 1 ceramic mug
  • 3 tablespoons melted butter
  • 1 packet Quaker Instant Oatmeal (Maple & Cinnamon for an added touch)
  • 2 tablespoons all purpose flour
  • 2 tablespoons brown sugar
  • 1/4 tablespoon cinnamon
  • 1/8  teaspoon salt
  • 1 cup of  desired fruit, chopped fine
  • 1/2 tablespoon all purpose flour
  • 1/2 tablespoon brown sugar

Double the recipe to make study time a little better

In one bowl, mix the oats, sugar, cinnamon and salt. Then, add the melted butter in the bowl. This is the topping of the pie so set it off to the side. Chop your fruit into small pieces for this recipe apples were used but feel free to try peaches, pears or any other fruit. In your ceramic mug, add the chopped fruit, 1/2 tablespoon flour, 1/2 tablespoon of sugar and 1/4 tablespoon of cinnamon. Mix until the ingredients are distributed evenly. Now take the topping and spread it on top of the fruit. Microwave for 2 – 2 1/2 minutes. There will be bubbling, so just let it cool off for a few minutes. Feel free to add whipped cream, ice cream or any other toppings. Enjoy.

 

Ice Cube Pie Nuggets

Ingredients:

  • Choice of fruit diced small
  • 3 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 1 1/2 teaspoon cornstarch
  • Ready Made Pie Crust
  • 1 egg wash (1 egg whisked well with 1 part water)
  • Ice cube tray

Preheat a toaster oven to 390 F. In a bowl, mix the fruit, brown sugar, cornstarch and cinnamon. Lay a layer of pie crust on top of the ice cube tray, leaving room for indents in the cube holes, where you will place the filling. Fill each well of the tray with your fruit filling, brush the edges with egg wash and top it off with another layer of pie crust. Seal the edges and flip the tray over gently to release your pie forms. Cut around each nugget leaving a little room for crust. Brush each nugget with egg wash and sprinkle some sugar on top (if desired). Bake for 25-30 minutes. Serve these bite sized treats with some caramel dipping sauce, ice cream or whipped cream for a little extra treat. Enjoy.
